Maple Rosemary Grilled Chicken and Fall Vegetables

Blend ½ cup maple syrup, ¼ cup low sodium soy sauce, 2 tbs olive oil, 2 tbs chopped fresh rosemary, 1 tbs lemon juice, 1 tsp dijon mustard, 3 cloves minced garlic, salt, and pepper. Reserve ¼ cup of marinade mix.

Place 6 boneless, skinless chicken breasts into a large Ziploc bag with remaining maple syrup mixture and allow to marinate until ready to use.

Brush two peeled, sliced sweet potatoes, sliced winter squash, large sliced purple onion and whole radishes with reserved marinade and grill until done to taste. Arrange on serving platter.

Place the chicken breasts on your best indoor grill on medium heat and cook until done, turning occasionally. Place chicken the breasts vegetables on the serving platter. Serve with crusty bread or brown rice if desired.

Jamaican Spiced Chicken Thighs

In a large bowl combine ¼ cup minced red onion, 1 tbs sugar, 1 tbs finely chopped fresh jalapeno pepper, 2 tsp cider vinegar, 2 tsp low sodium soy sauce, ½ tsp salt, ½ tsp black pepper, ¼ tsp ground red pepper. Add 6 to eight chicken thighs and toss to coat. Spray your best indoor grill with cooking spray and cook chicken thighs, turning occasionally until done. Serve with mashed sweet potatoes and cooked greens.

Great Grilled Pork Chops

Mix 1 tbs paprika, 1 tbs brown sugar, 2 tsp salt, 1 tsp black pepper and rub into thick-cut pork chops. Sear both sides on high heat on your best indoor grill and then reduce heat to medium and cook until done to taste. Serve with mashed potatoes and grilled fall vegetables such as squash, zucchini, and portabella mushrooms.

Lime-White Pepper Scallops With Bell Pepper Sauce

Puree in a food processor, two halved, roasted red bell peppers. In a small saucepan, heat 2 Tbs. olive oil and 2 finely minced garlic cloves until garlic are golden. Add the pureed bell pepper, and juice of one squeezed lime. Add salt and white ground pepper to taste. Blend with a whisk and set aside.

In a small bowl combine lime zest with salt and ground white pepper. Skewer 16 large sea scallops and brush with lime zest mixture. Cook scallops on your best indoor grill until opaque. Drizzle with red pepper puree sauce and serve immediately over white rice.

Grilled Lemonade Salmon

Mix with a whisk a marinade of 1 cup lemonade, ¼ cup soy sauce, 2 tbs olive oil, 2 tsp minced fresh ginger, 2 tbs brown sugar, 2 minced garlic cloves, Juice and zest of one lemon, salt, and pepper to taste.

Score the skin of the salmon in three 1 inch incisions. Place in baking dish on top of thickly sliced red onion. Marinate for one hour in the refrigerator.

Remove salmon and onions from marinade and discard marinade. Place salmon and onion slices on your best indoor grill, skin side down. Cook on medium heat, turning once. Grill until salmon is cooked through and onions are slightly charred and softened.

Grilled, Marinated New York Strip Steaks

Mix with a whisk, ½ cup olive oil, ¼ cup Worcestershire sauce, 2 smashed garlic cloves, 2 Tbs McCormick’s Montreal Steak Seasoning, 1 tbs red wine vinegar, ½ tsp dried basil, ½ tsp Italian seasoning. Pierce 2 to 4 New York Strip steaks with a fork and marinate in the mix for two hours in the refrigerator. Grill over high heat until the desired doneness is reached.
